I made this when I returned from my business trip…….
and it was as good as it looks! Wonderful flavor, comfort food, healthy dish, that warms your soul! And quick and easy! Who doesn’t like quick and easy! Make it on a week night using rotisserie chicken and you’re good to go! Try it, you’ll like it!
Lemon Chicken Soup with Spinach
1 Tbsp vegetable oil
4 shallots, chopped
2 stalks celery, thinly sliced
1 carrot, thinly sliced
2 (32-0z) containers
Low-sodium chicken broth
2 bay leaves
4 cups shredded rotisserie chicken meat
1 (6-0z) bag baby spinach, chopped
6 Tbsp fresh lemon juice
1 tsp salt (or to taste)
½ tsp ground black pepper (or to taste)
- In a large pot or dutch oven, heat oil over medium-high heat. Add shallots, celery, and carrot. Cook for 5 minutes or until softened. Add chicken broth and bay leaves, bring to a boil. Lower heat, and simmer for 15 minutes. Remove bay leaves.
- Stir in chicken, spinach, lemon juice, salt and pepper. Cook until spinach is wilted and chicken is heated through, 2-4 minutes.
