Marinated Cheese….a favorite

I don’t know about you, but when we get together for “snacky” foods (Southern for hors d’oeurves), we love to include this recipe on our table.   It is easy, it looks so pretty, and it is one that has the best marinade on it that I think would make a wonderful salad dressing – serve it over a spinach/strawberry salad with walnuts and crumbled cheese (your favorite -either bleu cheese or feta or even goat cheese) and you would have a winner.  This is a great tail gate food and if you serve this, you will be the hit of the football food voting!

Marinated Cheese

1/2 cup olive oil

1/2 cup white wine vinegar

2 Tbsps chopped fresh parsley

3 Tbsps minced green onions

1 tsp sugar

3/4 tsp dried basil

1/2 tsp salt

1/2 tsp fresh  ground pepper

3 cloves garlic, minced

1 (2-oz) jar diced pimento, drained

Combine these 10 ingredients in a jar; cover tightly and shake vigorously.  Set marinade mixture aside.

 

1- 8 oz – block of cheddar cheese, chilled

1- 8 oz- pkg cream cheese, chilled

Cut block of cheddar cheese in half lengthwise.  Cut crosswise into 1/4 inch thick slices; set aside.  Repeat process with cream cheese.  Arrange cheese slices alternately in a shallow baking dish; standing slices on edges.  Pour marinade (shaking once more) over cheese slices.  Cover and marinate in refrigerator at least 8 hours.  Transfer cheese slices to a serving platter in the same alternating fashion, reserving marinade.  Spoon marinade over cheese slices.  Garnish, if desired.  Serve with assorted crackers.  ( If its my family eating this, I just spoon the marinade on top and serve out of the same platter – why mess up more dishes!!!!!)
